Chiles en nogada is a seasonal dish of mild poblano peppers stuffed with ground pork and fruit, smothered in a sauce of walnuts, parsley and pomegranate seeds. It is colorful, featuring the three colors of the Mexican flag — green, white and red — so it is considered one of the most symbolic dishes in the country.
