Chef Wilo Benet is rethinking the flavors of Puerto Rican food

Over four decades, Mr. Benet’s career has taken him from Le Bernardin in New York City to the governor’s mansion in San Juan and his own Pikayo, one of the island’s top reservations for 28 years.
