Sixteen Elgin Community College culinary arts students submitted entries to Fisher Nuts' research and development team, which selected the top eight entries for a live competition.
Elgin Community College culinary arts student Riley Bartelt, 19, of Carpentersville, won a $1,000 scholarship for his recipe for sweet and spicy trail mix, which he entered in the Fisher Nuts Recipe Competition.

He later found out it was altered to a different name and cashed for $9,500.Fisher Nuts invited guests to the private event, and each was allowed to vote for their favorite dish of the evening.
“What inspired me to make this recipe is my love for all kinds of spicy foods and also trying to make a healthier snack option, while having maximum flavor,” Bartelt said. So Guido tweaked the recipe by substituting whole canned tomatoes for Clamato and by breading the shrimp in panko and cashew. The four students who received $250 scholarships were Christopher Canaday, of Malta, for Mexican-Asian fusion salad with chicken; Ely Greenfeld, of Elgin, for chicken tacos with cashew-habanero crema and crushed peanut red rice; Tanya Teeter, of Carpentersville, for a sweet potato peanut squash bisque; and Gabriela Vega, of West Dundee, for honey dijon almond chicken with cashew dipping sauce.
