Antipasto highlights include a hamachi crudo with Ghana basil and braised leek, as well as crudités with broiled broccolini, light crème fraîche, and surprisingly tasty chickpea fries. These would go well with a cocktail designed by Perry, who also serves as the restaurant’s beverage director.Perry describes himself as a “journeyman,” and was at the forefront of Dallas’ craft cocktail movement when he tended bar at PM Lounge, Victor Tango, and Parliament in the 2010s.
Horak says he’s a little bored of the “cab is king” mindset. “Every place I’ve worked has a seasonal menu that changes. People come back and want to try something different, but they always get the same wine,” he says. “So I think it’s about crafting a new experience and getting people to try something new. There’s a lot of great wine out there that’s not cabernet.”
