Hominy is maize that's been dried, then soaked in an alkaline solution to remove the hull and germ, causing the kernels to swell in the process. This treatment is often referred to as nixtamalization, and it not only improves the nutritional content of the corn, but also gives it a more complex flavor and aroma. It can then be ground into masa for tortillas, or sold whole—dried or cooked—as hominy corn, the signature ingredient in traditional Mexican posole.
