And sure, experts on the subject focus on big-picture indicators like displacement and business closures, but restaurants are powerful symbols in changing neighborhoods. They can represent what’s been lost, like a local bar closed after eviction. Or what’s to come, like that meme-ified café.

The definition we use in the toolkit is that gentrification is a process where a previously disinvested place suddenly sees an influx of investment as well as attention. And that creates this sudden chain reaction where you not only have a new more affluent demographic move in; you see a lot of displacement of previous residents. You see a change in the fabric of the neighborhood.

Say I've been running a restaurant for a few years and I notice the neighborhood I operate in is changing, and I'm worried that I'm part of the problem. What steps can I take right now to start lessening my negative impact? Assuming that you haven't done anything up until this point, the first step would be doing the self-work, any kind of social justice work. Ask yourself, what did the neighborhood look like when you first came here, and what does it look like now?
