Kau Ba chef Nikki Tran ushers in new era for Vietnamese-Cajun with special 'Viejun' menu
“Viet-Cajun is its own cuisine now,” Tran said. “Viejun is a way to claim ownership of it for Vietnamese restaurants. We have the right to claim it — to make it popular outside Texas and Louisiana.”The May menu will include dishes that Houstonians may have seen during Tran’s appearances on Netflix’s “Street Food” and “Ugly Delicious,” as well as Phil Rosenthal’s “Somebody Feed Phil.”
She’ll experiment with dishes and cook with what she finds at the market at Kau Ba, which opened in 2018. Some of the dishes might include snails boiled in Cajun spices, grilled squid with a dash of fish sauce, and maybe even a Viejun pho. According to the 43-year-old chef, Vietnamese-Cajun cooking is a big trend in Vietnam. While crawfish isn’t available, river prawns are often used and many Viejun-leaning dishes at streetside cafes are served in a casual style, often meant to pair with beer.
