When life gives you lemons, make this lemony shrimp risotto with asparagus.

magnamosaExcellent. I used carnaroli rice since I couldn't get arborio, and I added juice of half a lemon. It took a bit longer than 18 minutes to get the rice al dente but those were the only adjustments. Everyone loved it.i love making this! It is so good! Nothing else to say. Just try it, you'l love it!This is so good. Every time I make it I swoon! I used lime zest once and its was an interesting twist on lemon.

Love the ease of adding the grated lemon rind. The lemon flavor was perfect.Great recipe! Have been sick and haven't had much of an appetite. So obviously shrimp was out. Followed the recipe except for, I used a no sodium chicken stock and added a clove of garlic. Tasted, and salted as needed. Hopefully when feeling better will add shrimp.
