The Palestinian-Muslim owned shop specializing in bubble waffles and ice cream is run by three men — all under 30 — who leveraged some uncertain pandemic moments into a buzzing business.
For a place that dropped into downtown Downers Grove a mere season ago, Eiffel Waffle is serving up dessert creations with the confidence of seasoned pros.

Ghouleh says they spent most of the 2020 winter making, tasting and scrapping waffles until they landed on “the one” that was delicious on its own, and could be altered to incorporate seasonal flavors like cinnamon or pumpkin. The waffle has an almost custard-like flavor, and is made with lactose-free kosher dairy.
After months of scoping, they signed a lease for 1028 Curtiss St. in April and moved into the space in May, which gave them roughly 60 days until their projected opening date.The building was vacant for a year or more before Eiffel Waffle moved in, with no indoor dining space. What’s now a generously sized outdoor patio with tables and colorful umbrellas, was just a closed-off slanted edge.
“You don’t see many pointers that there’s a large Muslim presence here in Downers Grove,” he said. “We even see a lot of non-Muslims that prefer kosher or halal meat and that animals are treated right. We make sure our ingredients are sourced correctly, so it brings in a lot of people.”
