Postino wine bar reopens in North Texas
. Bailey talks about Postino’s tough beginnings and her future plans in Texas in this edited Q-and-A:Bailey laughs. “I’m not very employable,” she says. But she always knew she wanted to work in restaurants.
“We just rubbed sticks together and made it happen,” she says of Postino’s tough first few years. “We maxed out our credit cards, borrowed money from our parents and made it happen. ... I remember going to Costco and buying a case of Red Bull and a case of ramen, and I lived on that stuff for the better part of a decade.”Postino will open in Addison in August 2023 and in Southlake in September 2023.
The expansion outside of Phoenix started in Denver. “We found this old bookbinding building, so we started there first, out of state. Our [next] one was Houston, in The Heights. We’d been looking in Dallas for, I think, eight years.”The company is now growing more rapidly in California, Colorado, Georgia and Texas. Bailey says they’re interested in neighborhoods whose residents would appreciate Postino’s good-priced food and wine.“I think the areas are very foodie focused.
Austin is of interest. No other deals are signed in Dallas-Fort Worth, for now, except for Addison and Southlake.What are the most popular items at Postino?Postino is at 5280 Belt Line Road, Dallas. It opened Aug. 7, 2023. Postino is expected to open at 1440 Main St., Southlake, on Sept. 25, 2023.
