Here’s pretty much everything you can possibly do with a sheet pan:
You may know it as a rimmed baking sheet. Or perhaps a cookie sheet, or a jelly roll pan. I know it as a half sheet pan, and I can't live without it. I have three in my kitchen at home, and about 30 in the Epicurious Test Kitchen. Though they're just $10 pieces of equipment, my sheet pans are some of my most prized pieces of kitchen equipment.When I cook in a kitchen without a half sheet pan, my normal routines are thrown off track.
They're called half sheet pans because they're half the size of the full-sized rimmed sheet pans that are the workhorse of bakeries and restaurants. The full 18 x 26 inches is far too large for home kitchen ovens, though, while the 13 x 18 half sheet is just right for most anything you'll make at home. The quarter sheet is another favorite of mine.
