The brash and bitter West Coast IPAs of yore have given way to a new, more nuanced wave. These are the beers to try.

F. Martin Ramin/The Wall Street JournalIPA has been the bestselling category of craft beer, but the flavor profile has changed radically over those two decades—and repeatedly. West Coast-style IPAs alone have surged and ebbed fairly dramatically, and it looks like another surge is upon us.

In the aughts and early 2010s, the IPA market was dominated by aggressively hopped, brutally bitter beers from West Coast breweries, with taunting names like Ruination, Tongue Buckler, Palate Wrecker and 1000 IBU . A market correction arrived on the East Coast in the mid-2010s with a new breed of non-bitter, hazy IPA.
