'Tis the season!
In a food processor, pulse the wafers on high speed until finely ground. Sift through a fine-mesh sieve held over a large mixing bowl. Return any coarse bits to the food processor and pulse until fine. Return the wafer powder to the large bowl.
In a small bowl, whisk the rum, honey, vanilla bean paste, and orange zest until the honey is completely dissolved. Pour this liquid into the large bowl and fold with a silicone spatula until the mixture absorbs all the liquid and there are no visible dry flecks. Cover and let sit for 10 minutes.
